A few lines will not suffice to describe the history of this excellent facility and of Edmund Mach, the first principal of San Michele all'Adige school of agricultural studies. In 1871 Innsbruck Regional Diet acquired the monastery that is now home to the school and its estate, converting it into a school with a station for agricultural trials. Today, apart from teaching, the Foundation boasts 120 hectares of vines and apple orchards, a winery and a distillery. True to tradition the institute produces grappa with a discontinuous double-boiler still and creates a dozen monovarietals as well as the famous Castel San Michele grappa blend of two different grape varieties.
