Lievito is the first gourmet pizzeria in Beijing and joins the trattorias in the Omar Maseroli group: Mercante (opened in 2011) and Fiume (2014). Inspired by the cucina of Emilia Romagna, Lievito is a treasure box of Italian taste for those in the Chinese capital. The extra-virgin olive oil is amazing. Various hard-to-find varieties are on hand and they are masterfully paired with pizzas divided between turf and surf versions. Forty-eight hours of rising renders the dough ideal for the Moretti electric oven. The wine list is very sophisticated for a Beijing pizzeria.
