Four generations of the same family have always aimed at research, perseverance and substance, the result is dishes executed with excellent cleanliness and technique. Andrea, a super wine expert, is a perfect host. He recommends, illustrates and combines wines from a vast and extraordinarily personal cellar, very honest in its markups. The cuisine enhances the ingredient, only in season. The purity of Scottish salmon is excellent, the Livorno style stews are opulent, passing through asparagus with fried egg and the unmissable warm sea salad. Plus fresh and dried pastas, ribs, Florentine tripe, and the now rare sole meunière.
