Sergio Delle Monache's farm dates back to 1928 and covers ten hectares on the volcanic hills in the heart of the Tuscia PDO. The seven hectares of organically farmed olive groves are planted on clayey soil at altitudes between 300 and 400 metres, with 1,700 trees of the typical Tuscia Viterbese varieties, chiefly caninese, frantoio, maurino and leccino. The olives are processed within a few hours in a local mill, and pressed in an oxygen-free environment.
