From beans to bar. In Guido Castagna's case the effect is surprising as he runs a very small chocolate crafting outfit but his production is on a par with bigger businesses. He selects raw materials directly from plantations and purchases from certified cooperatives, with production chain traceability taking in the field, cocoa bean processing, toasting, conching, right to the finished product. All the products are excellent: chocolate bar, the spice and aromatic herb cremino, and, best of all, gianduia hazelnut specialities from the gianduiotto to spreads.
