Description

A beekeeping cooperative with members all over the Italian peninsula, especially in the south, and producing acacia, linden, orange, eucalyptus, borage, honeysuckle, clover, alfalfa, sunflower, and cherry honey; and Metcalfa honeydew named after an insect native to North and Central America. Contributing apiarists are nomadic. The honey is extracted cold using a spinner, then the product is left in ageing vats for about 40 days. At this point it is part is bottled and part is kept in drums to be sold as required.
