Filomena Coletta manages the estate on the slopes of the Ausoni mountains, with ten hectares of olive groves on rocky terraces planted with 2,500 age-old itrana trees. Within a few hours of harvesting, olives are processed in the estate mill and the oil is stored in oxygen-free conditions. The estate also produces Gaeta table olives, and complies with the Alta Qualità certified traceability project.
