Cured and cooked charcuterie of traditional inspiration includes coppa, guanciale, brawn, trotters, and cotechino, and exclusive creations: double cured pork fat; Luiset pancetta with aromatic herbs; roast loin; and guster, a Piedmontese-style artisanal frankfurter.
