The Cavalli family farm is set in 300 hectares of arable land, with olive groves and pastures that roll from the Pomarico hills as far as the River Basento. The owners are determined to integrate modern technologies and know-how with local traditions to create a model business, self-sufficient in terms of energy and able to produce quality cheeses. Their flagship is a PGI Canestrato di Moliterno, and there are also pecorino, goat cheeses, cacioricotta, caciotta, caciocavallo, ricotta, tomino in oil, and other delights.
