Cristina Pagliai and husband Fabio Goti own the Nunquam artisanal workshop and monitor every phase of processing to ensure top quality standards. They have two production lines: Alla Gusteria and Osteria de' Ciotti. The former making delicious preserves like friggitelli pepper and apple; relishes; jellies; and liqueurs. The latter offers tasty ready meals (reed tripe and Swiss chard with chickpeas; Chianina stew; sauces of venison, salt cod, or sea urchin; mackerel, caper and olive condiment), soups, pickled fruits and vegetables.
