Lago Vivo was created from the idea and passion of a family of fishermen and artisans in fish processing. Over the last couple of years the company has returned to processing fresh fish from Lake Bolsena. The fish is cold-processed then marinated or smoked, and packaged in a protected environment. The top product is lake whitefish, also available smoked and pre-filleted, for use instead of bacon or pork jowl for flavoursome fish-based dishes.
