Pralina, which is an acronym for 'Produzione Alimenti Naturali' ('Natural Food Production'), does a nice job representing Salento's dynamic food culture. Founded in 1991 as an artisanal laboratory by a group of young professionals working in the life sciences, in 1995 they planted the roots that would see them go on to achieve international success. Their sauces, creams, patés and ready-made condiments are produced according to an artisanal approach that involves the local territory. In 2016 their 'Biodiverse' line was launched, pulse soups and purees that highlight Puglia's ancient grains and legumes, making for nutritious, balanced meals.
