With ever greater awareness, Denis Lovatel continues unwaveringly on the path begun a few years ago, offering his guests increasingly genuine pizzas. Reduction of waste, environmental sustainability (also a priority in the choice of suppliers), great attention to vegetable produce and human health are all key, because eating well and feeling well can only go hand in hand. And of course, there's the extreme care taken for a product that gets better by the year. The crust, whether round or Roman-style "alla pala", is fragrant, melting in your mouth just the way it should. Their aptly combined, flavorful toppings follow the same philosophy. In summer try the Orient, with Gargano tomatoes, Agerola fiordilatte mozzarella, gorgonzola, caramelized onion and sautéed herbs. There are various types of Margheritas, from the Cilento to the tomato confit, to the classic version (which certainly shouldn't be missed). Another excellent pie is the Colori Gustosi, with tomato, Taggiasca olives, burrata cheese, tomato confit and toasted almonds. Their side dishes and service are managed with the same care and skill.
