The name encapsulates their entire philosophy: Radici Terra e Gusto ("Roots of Earth and Flavor") is a rediscovery of values and flavors of the past through innovative techniques and unique combinations. For four years Andrea Valentinetti, its chef and owner (long part of the Alajmo group, including a stint at Le Calandre) has been working in this beautiful period villa with adjoining café-bistro. Three menus span meat dishes, seafood and raw foods (from 40 to 70), plus there's a lovely menu that includes everything from horse tartare with orange hollandaise sauce, asparagus, mustard and phyllo pastry (delectable), to glazed eel, sauce with miso and bergamot, celery and shiso (flawless), up to cheesecake, yogurt, red berries and raspberry sorbet. Their wine list includes a wide range of quality products, as does their cocktail menu. There's also a new takeaway venue in the heart of the city.
