Economic difficulties, shortage of qualified staff, and problems in balancing budgets while remaining consistent by riding the business aside, the major league of the Italian restaurant industry is playing an increasingly gripping championship with a list of 47 Tre Forchette (highest recognition) awarded by Gambero Rosso's Ristoranti d'Italia 2024 guide - 7 more than last year - representing the Italian avant-garde in all its forms and contexts.

The region with the highest concentration of fine dining is Lombardy, with 10 champions of haute cuisine - half in Milan and its province - out of a total of 361 establishments in all categories, 222 of which are restaurants. The region of which Milan is the capital is followed by Piedmont, where of the current five Tre Forchette, three are new entries at the top of the ranking. Veneto comes in 3rd with three gold medals - and a double for the Alajmo family of Calandre in Rubano, which also maintains the Tre Cocottes in Venice with Amo - and Friuli Venezia Giulia with two confirmations. Then, dulcis in fundo, in Alto Adige there is the 'novelty' of Brunico (BZ): Atelier Moessmer Norbert Niederkofler, the new project of the great chef first at St.Hubertus in San Cassiano.

The 16 best restaurants in Central Italy with Tre Forchette
From Emilia-Romagna to Lazio, as many big names are all confirmed compared to the last edition. Having established the supremacy of Massimo Bottura's Osteria Francescana, the only Tre Forchette in the region but with the highest score (96) in the national ranking together with Niko Romito's Reale in Castel di Sangro. While Tuscany, narrowly overtaken by Lazio in terms of the number of restaurant "presences" surveyed in the guide (243 against 292), instead has four top establishments. Lazio, on the other hand, is a step away from Lombardy also in terms of concentration of haute cuisine, with 8 Tre Forchette, 6 of which in its capital, Rome. Finally, in the Marche region, watch out for Senigallia felix, a town with just over 45,000 inhabitants boasting two big “neighbours” like Mauro Uliassi and Moreno Cedroni.

If Niko Romito holds the first place nationally with Massimo Bottura in Castel di Sangro, as the only Tre Forchette in Abruzzo, in Campania - 154 destinations and 17 new entries - above all in a remote Telese Terme, in the Beneventano area, Giuseppe Iannotti's Kresios rises to the top (doubling with the special award as Restaurateur of the Year thanks to the new openings in recent months), to flank the 4 Tre Forchette in the province of Naples. While Puglia finally gains its place in the sun with the promotion of Pashà di Conversano, and Sicily remains stable with three big names.
