By now it is almost difficult to find anyone who does not have a vegetable garden, even in the form of a couple of flowerbeds in the back or a micro-greenhouse of herbs. The ecological issue - we have realised this with the pandemic - is everyone's business. The economic crisis has also forced many to opt for self-production and a circular economy where the virtuous recycling of waste, among other things, becomes crucial. From here to becoming a trend followed more by homologation and marketing than by sincere conviction, the step was very short. This is why it is important to intercept and valorise all those realities that are 'green' for real, by recent vocation or natural inclination. This year, for the first time in the Guida Ristoranti d'Italia, we have chosen 33 of them, many in the North (6 in Lombardy and the same number in Alto Adige), including the Newcomer of the Year, Coltivare; the restaurant awarded the No Food Waste recognition, Venissa; the new Tre Forchette signed by Norbert Niederkofler, promoter of the Cook The Mountain project as early as in the not too distant past; and Gianfranco Pascucci, promoter - and until last August president - of the non-profit association Periferia Iodata, a project on the protection and promotion of the incredible biodiversity of 'his' Fiumicino.
