The Trullo is conical dry-stone construction traditional to south-central Apulia. But this restaurant's connection to the region goes far beyond the sign, going for typical Apulian flavors in a warm and welcoming setting. Marco Criscuolo, chef and owner, succeeds in his intent to establish a corner of Puglia in California by using local products with others imported directly from Italy.
