Since 1908 the Distillerie Bonollo group has been managed by the family after whom it was named. They now run four distilleries around Italy (in chronological order): in Formigine (Modena), Anagni (Paduni), Osteria della Fontana (Frusinate) and in Torrita di Siena. The oldest, in Fomigine, was opened by Luigi Bonollo, the son of Giuseppe, the man who founded the business in 1908 when he officially registered the first distillate with the state. The whole family has had a part in making the producer one of the most important in Europe. With unflinching determination they have seen to it that the ingredients and processes used to make their grappas, brandies and other spirits are completely traceable and of the highest quality. Today Bonollo also produce tartaric acid (used in various industries), organic and natural mineral fertilizers, and even energy, thanks to their use of biomass materials, 60% of which comes from pomace.
