Brunelli

Description

Brunelli, established in 1938, is one of the key producers of Pecorino Romano and one of the few based in Lazio. It is far from small: a limited company distributing Italy and abroad, using not only milk from the Lazio countryside but also from Sardinia, as laid down in the PDO protocol. Its products are salted by hand and aged for longer than the minimum period provided for by the protocol. Brunelli distributes mainly to niche markets, in the best delicatessens and top restaurants.
