Produttori Latte e Fontina is among the Aosta Valley's key producers when it comes to traditional cheeses. It was founded in 1957 with the goal of producing, aging and selling fontina, and for more than 60 years the cooperative has been using caves to mature its products. Today it's constituted of about 200 members, including private businesses, cooperative cheese and milk producers, and Alpine pastures, and handles about 300,000 articles of fontine, which ripen in its seven aging halls carved out of rock. Their Valpelline matures in an entrance tunnel to an ancient copper mine, an area in use since 1946.
