Gioachino Palestro came to La Corte in 1988 with the goal of setting up a business to protect and promote traditional Lomellina charcuterie. Geese have always been the most widely bred animal hereabouts and are considered as a separate typology in this sector. PGI Mortara goose salami is the feather in La Corte's cap and can be bought to cook or already cooked. Other products include goose liver torcione, salami, breast and ham. Some of the pressed meats are kosher products.
