The new Ferraro bresaola is the product of a meeting between Simone Ferraro, an artisan of bresaola made without preservatives, and Mamete Prevosini, a wine entrepreneur. Production is still artisanal, even if the recipe, which calls for select meat and spices, now includes preservatives. Two lines are available: their Meraviglia is slightly smoked and intense while their Oltremera (literally beyond the Mera river', that is in Valtellina) is lean, with a more subtle flavor. Their SlinzegApp is also introducing. Made with bresaola trimmings, it's small, flavorful and perfect for an aperitif.
