Legù is a food specialty that's made with legumes (chickpeas, white beans and yellow peas) and is 100% gluten-free. Monica Neri, who holds a degree in restaurant science and technology, founded Itineri di Albizzate (VA), the company that produces Legù, in 2015. The pulses are steamed whole, so as to shorten the time required for preparation (3 minutes) without compromising the foods' nutritional value. The pasta is bronze wire-drawn, while drying is carried out at low temperatures. They also produce legume flour mixes and vegan snacks.
