A number of passions (wine, chocolate, coffee, sweet preserves) have one thing in common: quality ingredients. As Marco Colzani, an enologist fond of experimentation, explains, 'Production processes are similar: provenance, terroir, fermentation, acidity, sugars, tannins, oxidation.' Their production facility is divided in two. On the one hand there's coffee and cocoa, fruit and vegetables on the other. And that's how their chocolate bars come to be, along with sublime juices (in 50 flavors) made with locally-grown fruits and vegetables, harvested when perfectly ripe and cold-pressed within hours.
