Montecoppe is a perfect example of a small, sustainable approach to cheesemaking. When it comes to their PDO parmigiano reggiano they oversee every stage of production here in the Boschi di Carrega Natural Park, a natural oasis situated just a few kilometers from Parma. Milk, cheese and fodder are made here on site, guaranteeing high quality standards and transparency. Their new facility, built by architect Guido Canali and finished in 2016, was designed so as to have the least possible impact on the surrounding environment.
