The Pausa Café social cooperative was founded in 2004 with the objective of employing disadvantaged people and promoting fair and sustainable social and economic development. Its slow, artisanal roasting over wood enhances the properties of the coffee, purchased directly from the producers. Pure coffee comes from Huehuetenango (Guatemala) and Terre Alte; a blend of coffee from Sierra Cafetalera (Santo Domingo) and Huehuetenango, both Slow Food Presidia.
