Salt production has boosted the economy in this part of the province of Ravenna, set back from the sea, ever since Roman times. After years of neglect, Cervia municipal council stepped in to manage the salt flats, an area that has acquired international importance for its natural features and landscape. It has now become part of Parco Regionale Delta del Po Emilia Romagna. Salt is harvested in basin number 89, called Saline Camillone, from June to September, using a traditional manual method to prevent the formation of "bitter salt".
