Belli, Trentino's oldest charcuterie producer, now in its sixth generation, has been a byword for speck and more since the 1800s. It vaunts a long history as a great artisan, and the proof is to be tasted in all its charcuterie: cooked ham, porchetta, frankfurters; carne salada, corned tongue, salted lard; smoked and seasoned; fresh salamis and local pork specialities like Trentino lucanica and mortandela. These have now been integrated with a small range of charcuterie made with wild Sila pork.
