In 1925 Guido Falaschi opened a butcher shop in San Miniato, with his two children working with him, but it was not until 1967, when Sergio arrived, that the business gathered momentum. He expanded the product range to include forgotten pressed meats and he revived the food chain concept. Now in the fourth generation, the business purchases grey and Cinta Senese pork from local farms where the stock is semi-wild.
