Casa Perbellini 12 Apostoli awarded Michelin Guide 2025's new Three-Star rating

The 2025 Gambero Rosso Restaurants of Italy Guide has also re-awarded the venue with the coveted Three Forks, following its relocation to a new location in central Verona

Anticipation was high for the announcement of the fourteenth Three-Star rating, made during the seventieth edition of the Michelin Guide, with Casa Perbellini 12 Apostoli as the only new entry at the top (last year saw two new additions, Atelier Moessmer by Norbert Niederkofler and Quattro Passi in Nerano). The honour went to a moved **Giancarlo Perbellini**, who, after relocating to the new venue in the centre of Verona, has successfully made the logistical upgrade that does justice to the value of his cuisine and, importantly, to his entrepreneurial foresight.

The 2025 Gambero Rosso Restaurants of Italy Guide has also re-awarded Casa Perbellini with its Tre Forchette following a year of suspended judgement due to its recent reopening, coming just after the guide’s publication deadline. For context, Casa Perbellini’s score is up by two points from the 2023 edition, where it regained its Three Forks status following its move from Isola Rizza to Verona.

What’s on the Menu at Casa Perbellini 12 Apostoli

Enthusiasts had high expectations for Giancarlo Perbellini’s new residence in a location filled with history and memories, linked to the renowned chef Giorgio Gioco. The result exceeded expectations, starting with the stunning restoration by Patricia Urquiola, who successfully modernised these beautiful frescoed rooms, imbuing them with warmth and a sense of welcome that only a luxurious home can offer. The layout of the chef’s table is spectacular, with 12 seats within the kitchen under a hood that’s a small work of art, and there’s much more to tell. But it’s only right to highlight the cuisine itself. Born from the market, it blends creativity and tradition with intense flavours and a palate-pleasing satisfaction that captivates, free from excess and cerebral approaches. Three tasting menus are offered: *"Io e Silvia"*, a collection of the chef’s creations; *"Io e Giorgio"*, featuring dishes inspired by his predecessor; and *"L’Essenza"*, a vegetarian menu.

Perbellini’s *Il mio wafer...*—a bass tartare with goat cheese and liquorice—is a true signature dish, but every visitor should try (as the staff discreetly suggest) the warm Fusilli with marinated gobbetti, turmeric, and bay leaf—a true explosion of savoury flavour. What strikes you is Perbellini’s hallmark generosity toward his diners, expressed through approachable dishes and a total absence of the pretentiousness found in some haute cuisine restaurants. The desserts need no introduction—they are sublime—along with exceptional breads and focaccia. The wine list is extensive and well-balanced, mixing renowned labels with some adventurous choices, thoughtfully presented by the passionate sommelier. The young team delivers top-tier service and an outstanding rapport with guests. A memorable experience in both cuisine and hospitality.
