Da Vittorio is a guarantee across all latitudes. The Emerging Restaurant in the guide dedicated to the best Italian cuisine addresses abroad is New Wave by Da Vittorio Bistrot in Shanghai, the restaurant managed by the Cerea family within the UCCA Center for Contemporary Art museum. Opened in 2022, it represents the second establishment in the city, following Da Vittorio launched in 2019 and awarded as the Restaurant of the Year in the Top Italian Restaurants Guide 2022. The Cerea family's ability to immerse themselves in different cultures worldwide is simply extraordinary; languages and cities change, but not the style, know-how, guest hospitality, or the quality standards on the plate. In May, we also returned to Da Vittorio in Ho Chi Minh - here's our experience - finding Italian cuisine levels that were unimaginable for Vietnam.
Art, taste, and hospitality
Among the protagonists at New Wave, we find the chef Francesco Bonvini, originally from Cremona, a globetrotter who has moved from England to Australia, and the young manager and sommelier, Camilla Mora, who has curated a well-stocked and illustrated wine list with thoughtful choices to complement the dishes. Intelligently combining some classics from the Cerea repertoire with original pairings, such as the excellent Fujian yellowtail, marinated and served tataki-style with mayonnaise, smoked chilli powder, presented with a delicate clam soup. Elegant and well-balanced are the tagliolini with crab, fennel, and seaweed; the glazed quail is perfect. As always, the meal concludes with the classic cream-filled cannoli dipped in ground hazelnuts. One always leaves satisfied and content, thanks also to the excellent service. It's an example of a family spreading Italian cuisine and a way of experiencing the table around the world.
