Recipes with cod
Cod is a popular choice when it comes to family dinner. A firm, white and versatile fish that can be prepared by frying, grilling, steaming, baking or broiling. Usually sold in fillets, cod can be a good solution for New Year’s Eve dinner. Here are three traditional Italian recipes to try.
Roman-style cod
Ingredients
700 g cod
300 g chopped tomatoes
1 onion
2 garlic cloves
30 g raisins
30 g pine nuts
2 tablespoons of extra virgin olive oil
Salt
Pepper
Clean the cod and cut it into small pieces. Chop the onion and the garlic cloves. Heat some oil in a pan with the garlic and add the cod. Cook for a few minutes, then add the chopped tomatoes, the raisins and the pine nuts. Add a pinch of salt and pepper. Let it cook over medium heat for 30 minutes. Serve it hot with some polenta on the side.
Venetian-style cod
Ingredients
1 kg cod
300 g extra virging olive oil
2 garlic cloves
Salt
Polenta
Infuse the chopped garlic cloves in a glass with the olive oil and let it rest for a day. Steam the cod for 15 minutes, then let it cool. Chop the cod, place it in a pan over a low heat and whisk the fish while adding the olive oil: the cod needs to get a soft and creamy consistency. Add a few spoonfuls of cooking water and keep whisking. Serve the cod with some grilled polenta.
Pan-fried cod
Ingredients
500 g cod
150 g flour
1 glass of milk
1 egg
1 teaspoon of baking powder
Parsely
½ garlic clove
Black pepper
Olive oil
Clean and crumble the fish (you don’t need to blend it). Put together in a bowl the flour, the baking powder and then milk, then mix carefully. Add the egg to the mixture, plus a tablespoon of parsely and the garlic clove. Put the fish in the mixture, then heat some olive oil in a pan. Fry the cod and serve it piping hot.
