From traditional spaghetti to fresh homemade tagliatelle, a pasta dish can make any Italian smile. Creating the perfect sauce is easier than you think: here are three simple pasta recipes to try at home.
Penne with radicchio
350 g penne rigate
400 g radicchio
40 g Parma ham
2 tablespoons of extra virgin olive oil
1 onion
Parmesan cheese
Salt
Pepper
Clean and chop the radicchio. Gently fry the chopped onion in a pan with some olive oil, then add the Parma ham and the radicchio. Season to taste and cook for about ten minuts. Cook the pasta and pour it in the pan with the radicchio. Serve it with a handful of grated Parmesan cheese.
Spaghetti alla puttanesca
350 g spaghetti
300 g chopped tomatoes
80 g olives
3 anchovies
1 teaspoons of capers
3 tablespoons of extra virgin olive oil
2 garlic cloves
Parsley
Oregan
Chillies
Salt
Clean and chop the anchovies, heat some olive oil in a pan and gently fry the garlic cloves with some chillies. Add the chopped tomatoes, the olives and the capers with a pinch of oregan. Cook the sauce over a medium heat for ten minutes, then add the anchovies and some parsley. Cook the spaghetti and add them to the pan.
Tagliatelle with mushrooms and aubergines
350 g tagliatelle
4 courgettes
300 g porcini mushrooms
1 tablespoon of extra virgin olive oil
40 g butter
1 garlic clove
Parsley
Salt
Pepper
Cut the courgettes into strips, then chopp the mushrooms and warm some olive oil with butter in a pan. Start by cooking the courgettes for a few minutes, then add the mushrooms and cook them over a medium heat. Season with salt and pepper, add some parsley and a grated garlic clove. Cook the pasta and pour it in the pan while adding a few spoonfuls of pasta cooking water. You can serve the pasta with some grated cheese.
