A bakery that speaks multiple languages, and also opens its doors to vegans and gluten intolerants: it's called Sisu and is about to open in the Darsena area of Milan, with an international offering ranging from breakfast to aperitif.

Behind the project are Alessandro Sanso, Giuseppe Gallello, and Silvia Dell’Acqua, partners who have already found their balance with Gelsomina, a Milanese pastry shop with a beautiful Sicilian-inspired atmosphere. "The idea was born from our travels around Europe and the world," explained Giuseppe, "we wanted to cover a market segment that is still undeveloped in Italy."
That of modern bakeries with modern proposals, starting from breakfast, "which we would like to be the strong point of the place, starting from the viennoiserie, with French croissants, cinnamon rolls, and leavened bread from all over the world." There will then be snacks, aperitifs, and even lunch breaks, "we are defining the menu, starting from the Italian tradition to revisit it a bit and we will give ample space to savory pastries."
Specialty coffee, lunch breaks, and vegan options
The venue is corner-shaped with nine windows, "with a main hall, a smaller and hidden one, and then an outdoor area that we will activate with the good weather." There will also be options for vegans and lactose intolerants, as well as gluten-free sweets, "we cannot guarantee the absence of contamination, but for those with a simple intolerance there will be no problems."
Finally, there will be a coffee department, with beans from small specialty roasters that will change regularly, "we don't want to tie ourselves to anyone in particular, we will rotate many single origins and then we will have a base blend more suitable for traditionalist customers." The opening is scheduled by the end of May, just in time for the summer season, "we hope to bring a breath of fresh air, adding our personal touch to any preparation."
