It’s a throwback to the countryside of yesteryear, enhanced by a dining experience that is wholly contemporary. Local artisans, premium regional cured meats, freshwater fish, and farmyard animals feature prominently alongside freshly made pasta (the tortelli are exceptional). The kitchen masterfully combines contemporary techniques with the flavours of tradition.

What to eat at Ostreria dei Fratelli Pavesi

For the nostalgic, the pigeon rice bomba—a rare Piacenza specialty—is perfect for sharing. But diners will also be won over by the plin (small stuffed pasta) filled with rabbit, paired with Madeira-sautéed sweetbreads, fresh thyme, and Taggiasca olives, earning its place among the pantheon of great dishes.
