Mono in Edinburgh
Finally something new! We were impressed by this creative restaurant that brings together a healthy verve of experimentation thanks to the enthusiasm of a group of young and talented chefs in the historic centre. Behind it is the experience of a gastronome like Joseph Crolla, and the young chefs Andrea Pruneri and Simone Croci. The result is a contemporary cuisine that brings together the freshest local and Italian ingredients with Italian cooking techniques. Flavours are essential and sharp and incisive contrasts in the forefront. A fusion that works very well in a well-paced tasting menu based on flavours, simplicity and perfect textures. The sweetbreads with saffron rice, gremolata and lemon thyme; and the Milanese grouse breast, with turnips and smoked pancetta, were excellent. Modern minimalist decor and a menu that brings together the best of local products and Italian recipes, for a healthy dose of stimulating experimentation.
Wine list
Equally the wine list: young, fresh and super usable. Selection of signature wines, with many Italian vignerons who work in a healthy and sustainable fashion, very well matched to the cuisine. The wine selection displays lots of character and deep knowledge, there are some very small producers wich are hard to find even in Milan or Rome. The growth is impressive, the restaurant opened its doors in May 2018. The simplest and cheapest offer at the wine bar is also excellent, including the homemade pasta, snacks and quality cured meats. It’s a perfect space for a proper aperitivo or a relaxed after dinner. In short, ono deserved the 2020 Up-and-Coming Restaurant of the Year Award in our Top Italian Restaurants guide. We hope to find it working at the same rhythm as soon as the venue reopens. We can’t wait!
