The latest edition of Gambero Rosso’s Ristoranti d’Italia guide, presented at the Teatro Eliseo in Rome, as always, recognises not only the best fine dining venues across Italy but also the establishments that best represent regional Italian traditions. The top-rated receive the "Tre Gamberi" award, with 40 establishments achieving this honour this year out of a total of 502 trattorias mentioned. Among these, there are seven new entries: La Piola in Piedmont, Antica Trattoria del Gallo in Lombardy, Lerchner's in Ruggen in South Tyrol, Osteria Fratelli Pavesi in Emilia-Romagna, Buccia and Nú Trattoria Italiana dal 1960 in Lazio, and Arieddas - La Cucina della Marmilla in Sardinia.
Classic favourites, modern osterias, and an avant-garde Trattoria
Lombardy, Emilia-Romagna, and Lazio lead with six "Tre Gamberi" awards each, including two new entries in Sabaudia and in the province of Frosinone. The addition of Osteria del Gallo in Gaggiano (previously listed in the “restaurant” category) confirms its place as one of the most iconic establishments for traditional Lombard cuisine. Meanwhile, Michele Valotti, the most unconventional host in Italy from La Madia in Brione (BS), not only retained the "Tre Gamberi" but also received the "rocket" for avant-garde innovation—the only trattoria to do so—demonstrating that there are many ways to preserve and share tradition, even with a forward-thinking approach.
A number of double-award winners were also noted, including establishments recognised for their exceptional attention to the surrounding environment and synergy with local small businesses, highlighted with the green “gamberi” symbol. These include Agra Mater in Marche and Antichi Sapori in Puglia. Standouts for quality-price ratio (marked with a new “smile” symbol) were Nerodiseppia and again Agra Mater. Finally, the award for the Best Wine List in Central Italy went to Il Capanno in Spoleto—the only trattoria awarded this honour alongside Del Belbo da Bardon in San Marzano Oliveto (Piedmont) and Locanda Mammì in Agnone (Molise).
