The 52 best restaurants in Italy 2025 according to Gambero Rosso

The new edition of the Ristoranti d'Italia guide by Gambero Rosso, presented at the Teatro Eliseo in Rome once again showcases the best dining establishments across the country (with 2,430 entries for eating and drinking well). It rewards professionals who have stood out over the past year, with both familiar names and new entries.

This year, we aimed to further highlight those establishments seeking new creative paths, whether through innovative or even unsettling combinations and approaches. Food can stimulate new thoughts, deceive, and transport us to worlds we cannot see. With this in mind, topping this year’s Tre Forchette list (52 in total, 5 more than last year), we find a tie between Niko Romito’s restaurant in Abruzzo (Reale in Castel di Sangro) and Enrico Crippa’s restaurant in Piedmont (Piazza Duomo in Alba), the latter moving up two spots from last year.

Tre Forchette: between established names and newcomers

Giancarlo Perbellini returns to the top tier with his new location Casa Perbellini 12 Apostoli in Verona, after last year’s relocation left his status pending for the 2024 edition. Meanwhile, Pashà in Conversano (Bari) retains its title, despite recent changes, remaining the only *Tre Forchette* restaurant in Puglia.

Lombardy, with 11 Tre Forchette restaurants, including 2 new entries out of a total of 316 recommended venues, confirms itself as the region with the highest concentration of fine dining. However, the region with the highest "density" of top-tier restaurants (number of top establishments relative to geographic size) is Marche, with 4 Tre Forchette (including one new entry) out of 74 reviewed establishments.
And the best kitchens in Italy? Those of Niko Romito, Enrico Crippa, and Massimo Bottura—this golden trio achieved a score of 49 out of 50.
