The aromatic grape varieties, rich in fragrant molecules even before fermentation, are known as aromatic vines. These grapes are abundant in terpenes, substances found in the skin, giving rise to distinctive aromas that allow us to identify the raw material from which the wine in our glass originates.

Undoubtedly, the most famous aromatic grape variety is Moscato, or rather "Moscats," given the various types. Moscato is one of the oldest grape varieties, evidenced by its widespread cultivation throughout Europe and genetic variations leading to different skin colors (white, yellow, black, pink). Equally famous and ancient is the Malvasia family; some of its variants are aromatically neutral, but not the ones from Collio and Carso that we highlight.

The Gewürztraminer (aromatic traminer) is mainly cultivated in Alto Adige, to a lesser extent in Trentino, and more rarely in Veneto and Friuli. Outside Italy, it can be found primarily in Alsace and the Rhine Valley. A good Gewürztraminer is obtained from old vineyards located at higher altitudes with a significant temperature range, one of its characteristics being the ability to age well. At full maturity, it develops scents of fruit (fig), jam, spices (cinnamon, cloves, ginger), and has an intense aroma of dried roses.

Alcune uve geneticamente sono ricche di molecole odorose ancor prima che queste si sviluppino con la fermentazione. Sono i cosiddetti vitigni aromatici, uve ricche di terpeni, sostanze presenti sulla buccia, che danno vita ad aromi caratteristici, che ci permettono di individuare subito la materia prima da cui nasce il calice che stiamo assaggiando.

Il più famoso vitigno aromatico è senza dubbio il moscato, anzi "i moscati" visto che ne esistono diverse tipologie: è uno dei vitigni più antichi, come dimostrano la sua grande diffusione praticamente in tutta Europa e le variazioni genetiche che hanno portato anche a una diferenziazione dei colori delle bucce (moscato bianco, giallo, nero, rosa). Altrettanto famosa, altrettanto diffusa, altrettanto antica è la famiglia della malvasia; alcune sue varianti sono aromaticamente neutre, ma non le due del Collio e del Carso chge vi segnaliamo

Il gewürztraminer (traminer aromatico) è coltivato soprattutto in Alto Adige, in minor misura in Trentino e più raramente in Veneto e in Friuli. Fuori dall’Italia è possibile trovarlo soprattutto in Alsazia e nella valle del Reno. Un buon gewürztraminer si ottiene da vecchi vigneti collocati piuttosto in alto, in zone con accentuata escursione termica, una delle sue caratteristiche è quella di saper invecchiare a lungo. In piena maturità sviluppa profumi di frutta (fico), di confettura, di spezie (cannella, chiodi di garofano, zenzero) e ha un aroma intenso di rosa passita.

Il Moscato d'Asti Canelli Casa di Bianca 2022 di Gianni Doglia al naso si presenta con note di erbe aromatiche, frutta candita e caramella al miele, mentre il palato è equilibrato, con una bella acidità a sostegno della dolcezza e un finale persistente.  L'azienda di Gianni Doglia da qualche anno è un punto di riferimento imprescindibile del mondo moscatista per l'affidabilità e la qualità sempre molto elevata delle sue etichette, cui affianca una produzione di vini da uve barbera che si pone tra le più interessanti delle denominazioni e tipologie di appartenenza. Questa piccola realtà famigliare conta su una quindicina di ettari vitati, tra vigne di proprietà e in affitto, situati in collina, a circa 300 metri di altitudine, su terreni argilloso-calcarei.
