Locanda Sandi, owned by the Polegato family, celebrates tradition under the expert guidance of chef Luca Torresan in a setting reminiscent of the early 20th century

The atmosphere evokes the inns of the past, set against the backdrop of the Unesco-listed Prosecco Hills, where 300 years of winemaking have unmistakably shaped the landscape. Valdobbiadene, the heart of one of Italy’s most famous DOCG wine regions, is home to Locanda Sandi, which opened in late 2006 as an initiative of the Villa Sandi winery, headquartered nearby in Crocetta del Montello, Treviso.

From a former farmhouse to a restaurant with rooms

After extensive restoration of a former farmhouse, carried out with respect for the original structure and character, Locanda Sandi now spans three levels. The first two are dedicated to dining, while the upper floor offers six guest rooms, each uniquely decorated in the style of the early 20th-century Venetian countryside. The restaurant seats about a hundred guests and focuses on cuisine that deliberately draws from local tradition.

The expertise of Chef Luca Torresan

In the kitchen is chef Luca Torresan, who brings with him significant experience from notable establishments such as Il Cambio in Turin and the Danieli in Venice. With over thirty years of experience in Veneto’s culinary scene, Torresan has been instrumental in creating some of Treviso’s trendiest restaurants. His cooking highlights traditional recipes, while also allowing for modern interpretations: from risottos made with seasonal wild herbs to fegato alla veneziana (Venetian-style liver), alongside a wide selection of high-quality grilled meats and desserts inspired by the local area, including an original tiramisù. "We were pioneers in wine tourism, opening the doors of our winery to visitors as early as the 1990s," says president Giancarlo Moretti Polegato, "sharing the history and passion behind every bottle of Prosecco."

The pairings and the must-try dish

One of the most popular dishes at the Locanda is baccalà mantecato, served with polenta. This dish aligns with the tradition of Venetian cuisine, where it is often served as a cicchetto (small snack) in Venice’s famous bacari, accompanied by a crisp white wine. Locanda Sandi serves it with grilled polenta and crisp bread slices. In general, the dishes are paired with wines from Villa Sandi, including a selection of barrel-aged reds, from Corpore to the local Raboso. And, of course, the sparkling wines from the classic method Opere sit alongside the fresh, fruity bubbles of Valdobbiadene Prosecco Superiore DOCG, Asolo DOCG, and Prosecco DOC.
