Follie: fine dining according to Alfonso D’Auria
The offer is rounded off with fine dining that lives up to its name. The Follie restaurant is one of the jewels set inside the resort that ‘redefines the concept of Italian fine dining’. Fine dining and a tribute to the Romama tradition, based on raw materials from Lazio (but not only), intersects with an elegant and classic ambience, creating a gastronomic experience with Mediterranean flavours. Leading the kitchen sincemspring this year is chef Alfonso D’Auria. A citizen of Piemonte, in the province of Naples, with a long career in high-level restaurants behind him, he arrived at Villa Agrippina in 2012. The two tasting menus (currently available Il Grande Mediterraneo and Il Piccolo Mediterraneo, with six and four courses respectively) feature examples of Roman cuisine as incursions of the Campania chef’s flair and origins. A few examples? The ‘Carbonara...vera!’ re-proposes one of the best known Capitoline recipes following careful research into the raw materials that make up the dish ‘Spaghetti, egg yolk, guanciale d’Amatrice and pecorino’. The ‘Sfogliatella riccia ripiena di agnello sfilacciato, mousse di Provolone del Monaco e le sue animelle’, on the other hand, winks at the Campania tradition, reworking it through the chef’s skills and philosophy. There is also the possibility and pleasure of pairing with wine, thanks to a wine list listing over 300 selected labels from Italy and the World.
