Massimiliano Gaiatto's oil business got its start in 2006, basing its work on two properties: Podere Roncaccio (near Lake Como) and Podere Tondello (higher up in the hills). A total of over 900 olive trees give rise to two distinct and distinctive oils from two different estates. The painstaking attention to detail that has long distinguished the producer and its oils does the rest.
