The brisaola di codone is obtained from the meat of cattle selected by small farmers who respect rigorous animal welfare standards. It is processed strictly according to tradition, with salt and spices and in the total absence of flavourings, nitrites, nitrates, sugars and antioxidants. It is not bagged and is not cleaned of the fat cover that naturally covers it. Thanks to this characteristic it can mature for up to 10 months. At the end of the minimum maturation period (at least 100 days), it is soft and enveloping on the palate, with well-balanced flavor and sweetness.
