When Capitelli, an artisan specialising in pork cooking, approached Mortadella, he did so with the aim of recreating something mouth-watering, capable of stimulating instinct and appetite, as always happens in the presence of well-made things. Fresh meat from Italian pigs, salt, natural flavourings and spices, and cooked to perfection. La Sposa is an old-fashioned mortadella, genuine and appetising. This is suggested by its appearance (old-fashioned, somewhat crude and artisanal slice), its savoury smell and mouthfeel, its slight spiciness, and its juicy, meaty and somewhat rustic texture.
