This is classic pecorino as true Romans know it: bold, powerful, and full of character, with a robust sapidity. It's straw yellow, with granular, compact texture. Aromatically it's complex and pervasive, rich in fresh dairy notes, hints of vegetables and flowers, and light, toasty nuances of nuts. On the palate, one can recognize that signature, bold savoriness used in traditional Roman dishes. This doesn't, however, upset the balance of flavors, but rather extends them, all without overwhelming a beautiful array of aromas. Perfect both for eating and for grating.
