The best fresh thighs of heavy Sannio pork (pigs from 16 to 17 months) are selected, followed by the brine and marinating process with salt, flavourings and spices and a low percentage of preservative with antimicrobial and antioxidant properties. The cooking process takes place at a low temperature with a light smoking with beech and cherry wood and the addition of an irresistible' aroma.
