It undergoes a minimum of 24 months aging in the company's cellars on large wooden racks, just as in the past, until the desired time has passed, making for a complex aromatic profile, with hints of well-aged meat meeting saline and spicy notes. The final product is sweet, intense in flavor and persistent, melting in your mouth.
