Sottocrespone is one of the 5 types of Varzi salami, which has linked its name to the local salami, protected by a PDO. An ancient sausage (the origins date back to the Lombards), which represents the aristocracy of Italian salami, made with noble cuts of pork (at least 70% lean meat). Sottocrespone Vecchio Varzi is a one kilo fillet with at least 60 days of maturation and a sweet mouthfeel, well balanced with salt. A complete, clean and delicate salami.
