Sold under the Maluentu brand in a square tin can, Gusti Pregiati's local bluefin tuna belly is caught mainly in the Sardinian canal. Their "ventresca" (as the belly fillet is known in Italian) is a lovely, deep pink slice that offers up characteristic, precise fragrances of sea and preserved fish. In the mouth it's a smooth mix of sweetness and savoriness, of seafood but also vegetal hints and fruit.
