Christian Puglisi carries on a sustainable philosophy in his restaurant, which follows the seasonality of ingredients. Another noteworthy feature is the production of mozzarella and cured meats (and their ageing) done directly at home. The ingredients with which the high hydration dough is produced are of the highest level, even if the pies are not always baked evenly. In such a place it is a must to start with a platter of cured meats before ordering the pizzas. In this regard, we recommend trying the mozzarella, goat cheese, pickled zucchini in elderberry flowers and salt with thyme. The service is admirable - friendly and attentive even in the busiest of hours. Finally, we point out an excellent cellar of natural Italian wines from which to choose at your leisure.
